History of Maple Syrup from Saratoga Maple
The history of maple syrup production at Saratoga Maple began with the discovery of wild sugar maples growing on our family property in Minerva NY. We have been producing this sweetener since 2010 when we started selling small batches of syrup that was produced by boiling sap collected directly from these trees. In 2015, my father built his first evaporator machine to make larger quantities of maple syrup.
Making Bourbon Maple Syrup at Saratoga Maple
In 2021, we were able to get used alcohol distillery barrels with just a trace of bourbon left. We heat our Grade A dark syrup in a finishing pan, then pumped it into the barrel warm it and let it age. What emerged was simple and exceptional. Saratoga Maple's Bourbon Maple Syrup has a unique flavor profile and comes only from our own trees. It’s been aged for months to develop its full character before bottling. Bourbon Maple Syrup is made in upstate New York at Saratoga Maple. This thick, dark syrup is a real treat on pancakes, waffles, oatmeal, yogurt, breakfast, or just about anything. But it's especially good on ice cream. The bourbon gives the syrup a nice flavor that goes well with the sweetness of the maple.

The traditional sweet stuff ends up being even tastier and slightly smoky after spending up to a year in charred whiskey casks, reinforcing the sweetness of vanilla and caramel. However, the maple flavor is still present, to be sure. Here are some recipe ideas for capitalizing on this new taste in delicious ways, by substituting old-fashioned syrup for bourbon barrel-aged liquid when you cook.
