We collect our sap using taps and stainless buckets on our property in the Adirondack mountains and all of our syrup is slowly wood fired, heating, and boils the water off our pans naturally while the thermometer climbs.
How We Make Maple Candy
The Maple Candy process starts by making sap bubble into Saratoga real maple syrup and then boiling it until it reaches a temperature where it crystalizes and we see a gloss. Then, we keep cooking it on the heat and stir the real maple syrup in the pot with a wooden spoon or metal spatula until it's light and fluffy and ready to make maple candy. After stirring, we fill maple leaf candy shaped silicone rubber pan molds and allow the newly born maple sugar candies to cool on a rack. Once the maple sugar candy is completely cooled it has a soft texture, medium color, and intense maple flavor. No wonder why people are always wondering where to buy maple candy!
